Hot smoked trout and pea shoot salad recipe

Per serving:  354kcals

Ingredients:

  1. 500g waxy new potatoes, diced
  2. 2 large free-range eggs
  3. ½ tsp cumin seeds
  4. ½ tsp coriander seeds
  5. ½ tsp ground ginger
  6. 2 cloves
  7. A very mean pinch of turmeric powder or saffron
  8. 2 whole, hot-smoked trout or 4 medium-size fillets (these are sometimes sold ready-to-eat, in vacuum packs)
  9. 1 tbsp unsalted butter
  10. 1 tbsp mild salad oil (I use cold-pressed rapeseed oil)
  11. 100g or 4 generous handfuls pea shoots
  12. Juice of 1 lemon, plus lemon wedges, to garnish
